Red Lentil Root Veggie Soup

This is a super easy, nutrient dense red lentil root veggie soup!! It’s great for introducing new flavors to your baby and boosting your whole family’s immune system. This delicious combination of flavors is loaded with vitamins A and C, and is full of antioxidants and anti-inflammatory properties from the turmeric and ginger. Whether you eat this comforting soup chunky or creamy, it will warm your body from the inside out during these colder months and beyond!

 

Ingredients: 

  • 4 medium carrots
  • 2 medium sweet potatoes
  • 4 tbsp olive oil
  • 2.5 cups of water
  • ¼ turmeric
  • 1 tsp salt
  • ¼ grated fresh ginger
  • 1 can coconut milk

Instructions: 

  1. Wash, peel and chop the carrots and sweet potatoes
  2. Heat a pot over medium heat and warm the oil
  3. Add in the carrots and sweet potatoes and mix so the veggies are coated in the oil. Cover your pot for 10 minutes to let the veggies soften
  4. Add in the salt, turmeric, ginger, water and lentils into the pot and stir. Bring to a boil then simmer and cover
  5. Cook for 15 minutes until the lentils start to break down 
  6. Add in the coconut milk and stir well
  7. Leave chunky or puree smooth and serve warm to your baby, toddler and whole family! 

Notes 

  • Puree with an immersion blender
  • Store in an airtight glass container for 5 days
  • This soup freezes well for up to two months

    Is it one bag of lentils? What is the quantity of dried lentils needed for this recipe? Thanks!

    Hi! The recipe does not mention how to prepare the lentils nor how much to use, it says sweet potato instead.
