Protein Packed Blueberry Waffles

These waffles have become a go to breakfast in our home and my boys gobble these right up especially when I top them with almond or peanut butter. These waffles are made from the most delicious combo, healthy fats + protein, which will nourish your family first thing in the morning all week long! Sweet from the banana, tangy from the blueberries and satisfying from the cottage cheese, I highly suggest doubling this recipe because your kids will be asking for one right after the next! 

 

 Ingredients:

  • 1 cup rolled oats
  • 1 medium banana
  • 1/4 cup cottage cheese
  • 1/2 cup almond milk
  • Handful + a little more blueberries

Instructions: 

1. Wash your blueberries
2. Put all the ingredients into a blender and blend until smooth and creamy
3. Pour batter into a mini waffle maker 
4. Cook until ready and enjoy warm topped with nut butter and/or fruit! 

Notes:

  • Makes 4 mini waffles
  • I highly suggest doubling this recipe to have breakfast prepped for the week!!
  • Store in the fridge for up to 5 days in an airtight glass container

    My waffles do not form a waffle. I spray the waffle iron but it still sticks and does not cook in the middle.

    Can we replace cottage cheese with something else , my kids can’t have dairy and I will love to prepare this waffle for my boys
