Cauliflower Cottage Cheese Tots

This is a 2 ingredient super easy, convenient and yummy recipe for busy moms! Make a huge batch of these and keep them in the fridge for your kids to have as a snack or as part of their meal. This is such a delicious and easy way to fit protein and veggies into your baby and toddler's day! 

 Ingredients: 

  • 1 cup cottage cheese
  • 1 standard size bag of frozen cauliflower rice 

Instructions:

  1. Preheat oven to 350 degrees
  2. On the stove in a pot/saucepan, heat the cauliflower rice on medium heat and mix occasionally to defrost and sauté
  3. While it's defrosting, whip up the cottage cheese in a blender
  4. Then pour the cottage cheese into the cauliflower rice and mix together
  5. Line a baking tray with parchment paper and form your tots
  6. Bake in the oven for 45 minutes
  7. Enjoy straight from the oven while they're crispy or store in the fridge in an airtight glass container for a later time

Notes:

  • Enjoy warm or cold, both are delicious! 
  • Great for babies 9+ months
