Blueberry Pancakes

This is the easiest pancake recipe you'll probably ever make! This recipe comes together in under 4 minutes and can be made ahead, on the morning of, or at any point of the day/night. Mash a banana in a bowl, mix in a few simple ingredients, and make your pancakes- it’s that easy!! Enjoy the delicious flavor and texture of these fluffy pancakes as the blueberries burst in your mouth. My baby is obsessed and if you’re starting solids and need something solid, but soft and easy for your baby to eat, this is a good place to start! 

 Ingredients:

  • 1 banana
  • 2 eggs
  • 1/2 cup almond flour
  • 1/2 tsp baking powder
  • 1 tsp cinnamon
  • Handful of blueberries

Instructions: 

1. Mash the banana in a bowl
2. Add the eggs, almond flour, baking powder and cinnamon to the bowl and mix well with a fork or spoon
3. Mix in the blueberries
4. Coat your griddle or pan with ghee and make your pancakes
5. Cook on each side for about 4 minutes on medium to low heat
6. Enjoy hot and fresh, or store in the fridge in an airtight glass container for up to 5 days!

  • For babies 6+ months
  • Makes 10 pancakes
  • You can add in any mix ins - chopped nuts or other fruit
