Strawberry Cheesecake Ice Cream

This recipe is just as good if not BETTER than the original cottage cheese ice cream recipe!!! My family is totally hooked and I mean everyone from my husband to my toddler, mom and sister, we can’t stop eating it! I hope you love it as much as we do because this strawberry cheesecake ice cream is truly the most perfect guilt free summer treat!

 Ingredients: 

  • 1 16 oz container of full fat cottage cheese
  • 1/4 cup maple syrup
  • 1/2 tsp pure vanilla extract
  • a pinch of sea salt
  • 6 strawberries
  • 3 dates

Instructions:

  1. Add the cottage cheese, maple syrup, vanilla, salt and 4 strawberries to a blender and blend until creamy
  2. Then add the dates to the blender and blend until the dates are broken up but not fully blended - you're going for small chunky pieces
  3. Add to a freezer safe container or a loaf pan and top with the remaining 2 strawberries
  4. Freeze for 3-4 hours and then enjoy!

Notes: 

  • If you love strawberries in general, you will definitely love this nutritious treat! 
  • I used Good Culture cottage cheese
  • Thaw for about 15 minutes before digging in
