Spinach Quinoa Patties

These spinach quinoa patties are satisfying and nutritious, and super easy to make! All you need are a few simple ingredients that you already have in your fridge, and once ready, you’ll have a delicious toddler snack or side dish for lunch or dinner. Feel free to add in any and as many veggies as you would like (peppers, mushrooms, finely chopped broccoli), you can’t go wrong with adding more in this recipe!
 

Ingredients:

  • 1.5 cups cooked quinoa
  • 2 garlic cloves
  • 3 scallion stalks
  • 1 cup of spinach (lightly packed)
  • 2 eggs
  • Garlic powder
  • Salt
  • Pepper

Instructions:

  1. Preheat oven to 350 F and line a baking tray with parchment paper
  2. Chop up your veggies and place them in a bowl
  3. Add your cooked quinoa, eggs, and spices to the bowl and mix well with a fork
  4. Form your patties and place them on a baking sheet with parchment paper
  5. Cook for about 15 minutes or until edges are lightly browned
  6. Serve right away or store in the refrigerator for a later time
