Spinach Banana Pancakes
This is by far one of my most popular recipes! This is an easy way to feed your baby and toddler a superpower veggie without them even realizing it. These spinach pancakes are absolutely delicious and such a treat! Your whole family will love these hearty and nutritious pancakes for breakfast, or at any point in the day!

Instructions:
- Add all the ingredients to a blender except for the flour
- Blend for about 20-30 seconds until well combined and then add in the flour
- Blend once more for a few seconds
- Heat a skillet/pan with a little coconut oil
- Pour the batter onto a warm skillet/pan in small amounts
- Let the pancakes cook for about 3 minutes or until small bubbles form, then flip and cook for another 2 minutes
- Serve warm with any toppings or store in the fridge for a later time
Notes:
- Use a very very ripe banana so your pancakes have a sweeter taste
- This batter tends to be thinner so it spreads when you pour it onto the skillet. Pace yourself!
