Spinach Banana Pancakes

This is by far one of my most popular recipes! This is an easy way to feed your baby and toddler a superpower veggie without them even realizing it. These spinach pancakes are absolutely delicious and such a treat! Your whole family will love these hearty and nutritious pancakes for breakfast, or at any point in the day!

Ingredients:

  • 2 cups fresh baby spinach lightly packed
  • ½ cup almond flour
  • ½ cup whole wheat flour
  • 1 cup almond milk (or milk of choice)
  • 1 large banana
  • 2 eggs
  • 1 tsp pure vanilla extract
  • 1 tbsp ground flaxseeds
  • 1.5 tsp baking powder
  • 1.5 tsp cinnamon
  • 1-2 tsp coconut oil for cooking

Instructions:

  1. Add all the ingredients to a blender except for the flour
  2. Blend for about 20-30 seconds until well combined and then add in the flour
  3. Blend once more for a few seconds
  4. Heat a skillet/pan with a little coconut oil
  5. Pour the batter onto a warm skillet/pan in small amounts
  6. Let the pancakes cook for about 3 minutes or until small bubbles form, then flip and cook for another 2 minutes
  7. Serve warm with any toppings or store in the fridge for a later time

Notes:

  • Use a very very ripe banana so your pancakes have a sweeter taste
  • This batter tends to be thinner so it spreads when you pour it onto the skillet. Pace yourself!
