Protein Packed Waffles

These waffles are for delicious and easy to make for the whole family. Packed with cottage cheese for an extra nutritious meal, these waffles are crispy on the outside, and super fluffy on the inside. This is a go to breakfast for our family! You can serve immediately with any toppings, or store the in the fridge for a later time. These waffles freeze very well and are great for an on the run breakfast in the stroller or the car. 

 Ingredients

  • 1 cup whole wheat flour
  • 1 cup almond flour
  • 1.5 tbsp baking powder
  • 1/4 cup cottage chesse
  • 1 egg
  • 1/2 cup melted coconut oil
  • 1 tsp vanilla extract
  • 1.5 cups almond milk

 Directions

  1. In a large bowl, combine all ingredients
  2. The add the cottage cheese, egg, coconut oil, vanilla extract, and almond milk, mix well.
  3. Once combined, place 2 tbsp of batter in the center of the waffle iron and cook until done.
