Pesto Salmon

This is the perfect dinner for those rushed afternoons when you feel pressured to whip up something delicious and nutritious for dinner, but don’t want to spend hours doing so. This pesto fish recipe also requires very minimal clean up which in my book is a total win! Basil and Salmon both provide our bodies with a plethora of beneficial nutrients, so make your whole family this tasty and satisfying dish on any day of the week!
 

Ingredients:

  • 4 (8 ounce) pieces of salmon or any fish
  • 2 cups basil (tightly packed)
  • 4 fresh garlic cloves
  • handful of walnuts
  • ¾ cup + a little more olive oil
  • salt
Optional Toppings:
  1. mushrooms (any veggies)
  2. pine nuts
  3. parmesan cheese

Instructions:

  1. Preheat oven to 375 F
  2. Lightly rinse your pieces of fish with water and dry them with a paper towel
  3. Lay the fish in a pyrex dish and sprinkle with salt
  4. In a blender combine the basil, fresh garlic cloves, olive oil, walnuts and salt
  5. Once completely combined, cover each piece of fish with the pesto and distribute evenly
  6. Top the fish with any toppings
  7. Cook in the oven for around 25-30 minutes (depends on the thickness of the fish)

Notes:

  • When making the basil, be generous with the salt
  • I like to broil my fish at the end for about 2-3 minutes
  • Serve along side quinoa, rice, pasta, and/or veggies/salad
