One Bowl Blueberry Banana Bread

This one bowl blueberry banana bread is a family recipe, one that my mom continues to make for me until this day! It's super easy to make with only a few simple ingredients and is a hearty and nutritious breakfast or snack for the whole family. I know you'll enjoy the tasty burst of blueberries in every bite!! 

 Ingredients:

  • 3 cups almond flour
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1 tsp cinnamon
  • 2 ripe bananas
  • 1/3 cup maple syrup
  • 3 eggs
  • 2 tbsp chia seeds
  • 1 cup blueberries

Instructions: 

  1. Preheat your oven to 350
  2. In a bowl, mix together the dry ingredients 
  3. Then add in the bananas along with the wet ingredients and blend with a hand mixer
  4. Add the chia seeds and blueberries and mix with a spoon
  5. Pour into your loaf pan 
  6. Bake at 350 for 25-30 minutes or until toothpick comes out clean
  7. Let cool completely before cutting slices

Notes:

  • Substitute the blueberries for chocolate chips if you're craving a sweet treat or have chocolate lovers in your home
  • The more ripe your bananas are, the better! 
  • Store in the fridge covered for 5 days
