Date Caramel Oat Bars

This is my go to post dinner dessert! I have been making these delicious bars on repeat every week and my toddler is totally obsessed too! The combination of dates, almond butter and oats really hits the spot and will leave you and your toddler feeling happy. This is truly a feel good, guilt free, sweet treat and I hope you love it as much as we do! 

 Ingredients:

  • 15-20 organic medjool dates, pitted
  • Hot water
  • 2 tbsp melted coconut oil
  • 1tsp vanilla extract
  • 1/3 cup almond butter
  • 1/3 cup quick cooking oats
  • Sprinkle of sea salt

Instructions:

  1. Add pitted dates to a bowl and cover with hot water. Let them soak for about 10 minutes.
  2. Drain the dates and add them to a food processor with almond butter, coconut oil, vanilla extract and sea salt. Blend until smooth. 
  3. Transfer to a bowl and fold in the oats with a spoon
  4. Once combined well, put the mixture in a small square or rectangular glass dish and flatten evenly
  5. Cover and put it in the freezer for 20 minutes to harden, and then remove from the freezer to cut into bars. Then return to the freezer.

Notes:

  • I love to leave these in the freezer at all times and when I’m craving a sweet treat, I go into my freezer and grab one
  • If you're a chocolate lover, coat the top in melted chocolate and let it freeze completely before cutting into bars
