Apple Banana Pancakes

This is a delicious breakfast right off the stove or straight from the fridge for those rushed mornings on the go! Naturally sweet from the apple sauce and banana, and full of protein from the Greek yogurt, this is an easy and yummy breakfast for the whole family. These pancakes can also be made ahead of time and they store well in the freezer for up to 3 months.

 Ingredients

  • 3 eggs
  • 3 tbsp of Greek yogurt
  • 3 tbsp of apple sauce
  • 3/4 mashed banana
  • 6 tbsp whole wheat flour
  • 1 tsp ground cinnamon
  • 1/2 tsp baking powder
  • 1 tsp ghee

Instructions: 

  1. In a large bowl combine the wet ingredients.
  2. Then add the dry ingredients into the bowl and mix well.
  3. Once combined, heat the pan on medium heat with ghee.
  4. Scoop 1 tbsp of batter per pancake onto the pan.
  5. Cook for 3-4 minutes on one side, then flip and cook for another 2 minutes.
  6. Serve warm with sliced bananas, berries, chopped nuts or any topping of choice.

Notes: 

  • Makes about 20 pancakes
  • Store in an airtight glass container for up to 5 days
