Almond Butter Blueberry Oat Bars

I can't emphasize enough how much my family loves this recipe, myself included! I keep finding myself heading back to the fridge for another bite of this tasty snack. The burst of blueberries gives it an extra delicious flavor, but if you're not into cooked berries, swap it out for some chocolate chips. Perfect for on the go mornings, packed in lunch boxes or served for breakfast, these bars are super hearty and satisfying, and will leave you and your family feeling good all morning long! 

 Ingredients: 

  • 1 cup oat flour
  • 1 cup rolled oats
  • 1 tsp cinnamon
  • 1/2 cup unsweetened coconut shreds
  • 1/4 cup hemp seeds
  • 1/8 tsp sea salt
  • 1/3 cup creamy almond butter + a little more
  • 4 tbsp coconut oil 
  • 3 tbsp honey 
  • 1 tsp vanilla extract
  • 1/2 cup fresh blueberries 

Instructions: 

  1. Preheat oven to 350 degrees 
  2. Combine oat flour, oats, cinnamon, coconut, hemp seeds and salt in a bowl and mix together
  3. In a small pot, combine the coconut oil, almond butter, honey and vanilla and stir until melted and creamy
  4. Pour the wet mixture into the dry ingredients and mix making sure to coat the oats well 
  5. Fold in the blueberries and then press the mixture into a square baking dish
  6. Bake for 20 minutes until golden
  7. Once cool, place in the fridge to harden before cutting into bars

Notes: 

  • Store in the fridge in an air tight glass container for up to one week
  • Sub the berries for chocolate chips or leave out mix ins
  • These bars have a tendency to crumble, so make sure they harden before cutting 
  • Save the crumbs and add them to a yogurt bowl, you wont regret it :)
