Almond Butter Protein Bars

This is a sweet treat for you mama, and your partner will love it too! These healthy bars will totally satisfy your sweet cravings and hit the spot. Nourishing your baby first starts with fueling yourself and this yummy treat is the perfect way to do so!
 

Ingredients:

  • 8 organic medjool dates
  • 2 cups rolled oats
  • 1 cup nut butter (I used peanut butter and often use almond butter)
  • 1/2 cup melted coconut oil
  • 1/2 cup raw honey
  • pinch of sea salt
  • 1 tbsp chia seeds
  • 1/4 cup unsweetened coconut shreds
  • 1/4 cup protein powder of choiceInstructions:

Instructions:

  1. Soak dates in water for 15 minutes. Then remove the pits.
  2. Pulse the oats in a food processor until they’re almost a flour like consistency
  3. Add all the ingredients to the food processor and pulse until all the ingredients sticks together
  4. Remove from food processor and press the mixture onto a parchment lined baking sheet
  5. Place in the freezer for 30 minutes
  6. Slice into squares and store in the freezer or fridge for a delicious treat!

Notes:

  • Stores well in the freezer for a month or the refrigerator for 2 weeks
  • Can substitute almond butter for any nut butter
  • Can make without protein powder
